Avocado Cheddar Sandwich
Take a handful of tomatoes, slice them in half and put them in a small bowl
-roma, cherry, something meaty inside.
Add a splash of good quality balsamic vinegar, a chopped up garlic clove or 2 and a wee drizzle of good olive oil.
Refrigerate overnight or for a few hours before using.
Assembly:
2 slices dense bread-toasted or untoasted-I use a multigrain sour dough
Spread with grainy mustard (you might prefer mayonnaise)
Add sprouts (sometimes not)
Slices of old cheddar
Slices of avocado (if a bit ripe, I mash it in a bowl first + then spoon it onto the sandwich)
Freshly ground black pepper
Add some slices of your balsamic vinegar marinated tomatoes
A few more sprouts (or lettuce or both)
