I think many of us enjoyed these cookies as a part of our childhood.
These are certainly not macaroons of the egg-whitey, stiff whipped variety...these are the sugar laden make them once every 2 years variety of macaroon.
Try adding orange zest and/or dried cranberries for variety.
Chocolate Macaroons
Stir the following together over medium high heat--boil for 3 minutes:
4 cups white sugar
1 cup butter
1 cup milk
pinch of salt
Then add: 1 teaspoon vanilla
Remove from heat + add the following:
5 cups rolled oats
1 cup flaked coconut
8 tablespoons cocoa powder
Mix until well combined. Drop by the teaspoon or tablespoon for larger cookies onto a parchment paper lined baking sheet. Allow to cool until set. This recipe makes A LOT of cookies.
Did you know that you can reuse your parchment paper?
Simply wipe with a clean wet cloth + rinse the sheets under warm running water + allow to dry.
